Meal Plan 02/20/23 - 02/24/23

We got hit by a virus last week (not the virus just a virus but it knocked us out all the same). We’re easing back into this week gently is what I’m saying - and today’s stat holiday certainly helps.

Monday: Crispy Baked Chicken Wings served with Potato Leek Soup and a fresh veggie plate.

Tuesday: Fake Shack Burgers served with a fresh veggie plate.

Wednesday: Spaghetti served with green salad.

Thursday: Poppy’s school is doing a pizza night fundraiser so we’re ordering pizza and breadsticks.

Friday: Leftovers!

Meal Plan 02/13/23 - 02/17/23

It’s still February. I don’t know what to say. It’s dark and grey and gloomy but it’s also the very early stages of spring so our seasonal allergies are starting. We’re Winter Gloomy AND Spring Sneezy is what I’m saying. It’s not a great combo.

Monday: Bangers and Mash served with green peas

Tuesday: Heart-shaped personal pizzas made with crispy, chewy, bubbly crust served with a veggie plate and chocolate-covered strawberries for dessert

Wednesday: White Chicken Chili

Thursday: Southwestern Corn Chowder served with tortilla chips and homemade guacamole

Friday: Spanish Tortilla topped with garlic aioli and served with arugula salad

For snacks and lunchboxes, I’m making Banana Bread, Mom’s Mac & Cheese, Double Chocolate Chip Cookies, and Big, Fat, Chewy Chocolate Chip Cookies (but I’m replacing the chocolate chips with mini m&ms)

Meal Plan 02/06/23 - 02/10/23

Well it’s still February. It’s grey and gloomy and the kind of cold that seeps into your bones. I’ve got a bottle of wine that was given to us and we haven’t managed to drink it yet so it feels like time for beef bourguignon. Ina’s Beef Bourguignon to be exact.

Monday: Butter chicken made with a bottle of the Costco pre-made sauce served with rice and green peas

Tuesday: Potato Leek Soup served with sausage, peppers, and onions on the side

Wednesday: Ina’s Beef Bourguignon served with mashed potatoes.

Thursday: Leftovers

Friday: Leftovers / takeout / cereal / snack plate / I literally do not care it is Friday eat a bowl of popcorn and call it dinner.

Meal Plan 01/30/23 - 02/03/23

Both kids have a pro-d day so they’re home from school, I took the day off work to be with them, and Grady’s school’s PAC organized a pizza night fundraiser (MVP! MVP!) so I’m not mad at this Monday is what I’m saying.

Monday: Takeout pizza and breadsticks!

Tuesday: Cutting it close with one of my 23 for 2023 goals, January’s Dip Dinner. The original intent of Dip Dinner was to host people and make it a thing but I’m still feeling Winter Gloomy so January’s dip dinner is going to reflect that and be just us. Caramelized Onion Dip served with lots of fresh cut veggies, plain ripple chips, pretzel sticks, pepperoni sticks, etc.

Wednesday: Spaghetti and garlic bread

Thursday: Leftovers

Friday: Poppy’s school is holding their Winter Wonderland event so Shawn and Grady will fend for themselves and Poppy and I will eat pizza there (a two-pizza week! Is there anything better?!)

For baked goods, I’m making my weekly pumpkin bread for Grady’s packed lunches and Grossy Pelosi’s Chocolate Chip Cookies but I’m substituting half the chocolate chips with festive m&ms to use them up.
