This week is Poppy’s birthday week. The Festival of Penelope if you will. It’s a holiday Monday here in Canada so we’re doing Poppy’s birthday dinner tonight and keeping it simple tomorrow after work / school / daycare.
Monday: Poppy got to pick the menu so we’re doing all of her favourite foods: honey garlic chicken wings, fries with gravy, tomato soup, garlic bread, and queso and chips. I’m going to add a giant fruit and veggie plate so my mom card doesn’t get revoked.
Tuesday: Poppy’s actual birthday. Shawn and I will have kale salad topped with seared tuna steaks. The kids will have some form of pasta with sauce.
Wednesday: Wednesday is shaping up to be a pretty intense day so I’m leaning toward comfort food for dinner. I’ll either do pancakes, bacon, and cheesy scrambled eggs or BLTs if I make it to the bakery for the good seedy bread.
Thursday: The weather forecast looks rainy and grey on Thursday so I’ll do a big pot of lentil soup and fresh cornbread with honey butter.
Friday: Broccoli Rabe & Sausage Pasta served with green salad.
