I'm desperate to get back into the habit of meal planning but I feel unenthusiastic about shopping for food, preparing food, eating food, trying to convince my family to eat the food, and doing it over and over again. What utter nonsense is this?! The only way I'm going to get back into the habit of a weekly meal plan is to actually, you know, meal plan, so here we go (imagine me gritting my teeth and snarling as I type this, okay? Accuracy matters.)
Stupid Monday: Red Lentil Coconut-Miso Soup for #meatlessmonday. Literally no one but I will eat this soup, I guaran-goddamn-tee it.
Whatever Tuesday: Tacos with some sort of protein. Probably chicken because Poppy is obsessed with chicken right now (she requested it for breakfast at 7:30 this morning. Tiny weirdo.)
Ugh Wednesday: Instant Pot Chili and cornbread.
Crap Thursday: Blessed leftovers.
Fiiiiine Friday: snacky dinner with veggies and dip, cheese and crackers, salami, pickles, extra garlicky olives even though the sight of olives on a plate is enough to give everyone else in my house a case of the vapours, chicken wings, and devilled eggs (my dudes, the Instant Pot was worth it for the easy hard-boiled eggs alone. My goodness.)
