Last week's meal plan went sideways mid-week and I ended up throwing a bunch of groceries in the freezer. This week I'm determined to cook so we're not wasting money and also because it's self-care to put nutritious food in my body. When I locked up in an anxiety spiral, the first thing that suffers is my will to eat healthfully. I reach for sugar and simple carbs, I feel worse, I sleep worse, and then I reach for more sugar and simple carbs. It's a nasty cycle. So! This week I am going to take it easy on myself (no multi-course meals) but also make an effort to eat protein and vegetables every day. I will not survive the week on caffeine and Christmas cookies alone.
Monday: last week I doubled the meatballs when I made this recipe and froze them (past Hillary is brilliant). I'm going to bake them and throw them in a simple tomato sauce served over spaghetti noodles.
Tuesday: oven-roasted chicken shawarma with garlic sauce (to use up the thighs I froze last week). I plan to serve with steamed broccoli and cauliflower and Greek salad.
Wednesday: brother-in-law's birthday dinner out!
Friday: Shawn has a work thing so I'll make homemade pizza with Grady.
