Broccoli Slaw

Grady is going through this annoying phase where he won't eat anything green lately so I keep trying to make green veg fun and exciting (to no avail. Green is downright offensive to him.) It's working out for me, though, because now I get to eat twice as much (what? It's broccoli. It's allowed.)

Broccoli Slaw

1 large head of broccoli, finely chopped
1 stalk of celery, finely diced
1 green onion, finely chopped,
1/4 cup dried cranberries, roughly chopped (don't both chopping if you don't have texture issues. I gag at the thought of eating a whole dried cranberry.)
2 Tablespoons hemp hearts
1 Tablespoon chia seeds
Juice of 1 lemon
1 Tablespoon red wine vinegar
1 heaped Tablespoon mayo
salt and pepper to taste

Mix everything together well and serve chilled. The key to a successful slaw (in my opinion) is chopping everything fine enough so that you get a little bit of everything in each bite. This slaw is wonderful with a bit of apple in it too, and sunflower seeds. And bacon. It's versatile is what I'm saying. Switch it up to your tastes. Unless your tastes are of the string cheese and pancake variety like Grady's.
