There is no end in sight. My kitchen is still overrun by zucchinis. Send help.
I made this zucchini bread recipe with the following modifications:
I cut the entire recipe in half to make one loaf instead of two.
Cutting the recipe in half meant I ended up needing 1-1/2 eggs. I took a walk on the wild side and used two eggs instead of trying to figure out how to halve an egg. Everyone lived.
I used chocolate chips instead of walnuts because obviously.
I mixed together a heaped Tablespoon of white sugar and a teaspoon of cinnamon. I spread half the batter in the loaf pan, sprinkled it with half of the cinnamon sugar, spread the rest of the batter on top, and then sprinkled the top with the remaining cinnamon sugar. Makes for a nice little spice and a gorgeous crusty top.
You guys. I hate zucchini. I hate its stupid green skin and its annoying versatility. I am so over it.
