Meal Plan 03/27/23 - 03/31/23

We kind of lost the plot over spring break and meal planning (and regular meals) (and vegetables) became a distant memory. School is back in session tomorrow and I am determined to get us all back on track (she says while both kids furiously try to finish all of their spring break homework in one sitting, the night before school reopens). We’re doing the best we can.

Monday: Turkey Enchiladas

Tuesday: Grilled cheese sandwiches made with Grossy Pelosi’s Mom’s Italian Bread served with Black Lentil Soup

Wednesday: Leftovers

Thursday: Buttermilk pancakes, cheesy scrambled eggs, and oven bacon

Friday: Crispy Spicy Salmon Bowls

Meal Plan 03/13/23 - 03/17/23

The kids are on spring break and yesterday was the DST time change and still the people in my house need to eat multiple meals per day. It is relentless.

Monday: poke bowls (tuna for Shawn, tofu for me)

Tuesday: Hearty Green Salad with Spicy Peanut Chicken

Wednesday: Tuna Melts on sourdough toast served with veggies & dip

Thursday: Leftovers or snack plate dinner

Friday: Beef & Guinness Stew served with Irish Soda Bread

Meal Post 03/06/23 - 03/10-23

Last week was a busy week and this week is looking like it will be a busy week and I suspect I will be saying this until the kids grow up and move out.

I don’t mean to jinx it but this week’s weather forecast isn’t calling for significant amounts of snow. It is predicted to be cold and chilly though, so comfort food is where my head is at.

Monday: I’m going to roast a chicken and use some to make burrito bowls and save the rest for Tuesday’s soup

Tuesday: Lemon Chicken Orzo Soup served with grilled cheese sandwiches

Wednesday: Lentil Mushroom Stew over Mashed Potatoes

Thursday: Leftovers

Friday: Weeknight 30-minute Coconut Curry Chicken Meatballs

For snacks and packed lunches I’m making a loaf of bread and these brownies that my friend just introduced me to and may be the most perfect brownie.

Meal Plan 02/27/23 - 03/03/23

The snow returned this weekend. Last week I spent a not insignificant amount of time mining for joy by staring at the tiny buds in my garden, willing the tulips and daffodils and snowdrops to grow with the power of my desperation, and this week they are all covered with snow. It’s time to get cozy is what I’m saying.

Monday: Dip dinner! Frank’s RedHot Buffalo Chicken Dip. I’m going to halve the recipe and serve it with fresh veggies and tortilla chips.

Tuesday: Grossy Pelosi’s Vodka Sawce rigatoni served with a side of steamed broccoli.

Wednesday: Spicy Peanut Butter Ramen with frozen peas topped with grilled steak, lots of cilantro, and soft-boiled eggs (made super fast in my Dash!)

Thursday: Sweet Potato Turkey Meatloaf served with green salad.

Friday: Salmon Leek Quiche served with green salad.

Snacks and lunch boxes: Pumpkin bread (no chocolate chips), mini loaf pan focaccia, soft batch chocolate m&m cookies.

I’m also really hoping to have my shit together enough to make a Nanaimo Bar Cake for my dad’s birthday.
