Meal Plan 09/27/21 - 10/01/21

I feel like I’ve unintentionally been a meal plan fraud. In the last week, two people have lauded my meal plans and made comments that indicate they think I have my shit together. Spoiler alert: I do not. In fact, last week we made it to Tuesday before the meal plan was a long-forgotten thing of the past. I stick to the meal plan and have a perfect week … maybe once per month. The weekly meal plan is aspirational, pals. We’re all just doing the best we can.

Monday: Poppy requested “beesketti” (the spaghetti that never materialized from last week’s meal plan) and a very rainy Sunday meant I was able to make it happen. We’ll have spaghetti served with green salad and garlic bread.

Tuesday: As has been the theme of my life lately, when I made the spaghetti sauce today, instead of opening a can of tomatoes, I accidentally opened the giant can of pumpkin puree I snagged at the grocery store this weekend because supply chain struggles won’t keep me from my birthday pumpkin pie in a couple of weeks. So I’m going to make Vegetarian Pumpkin Chili. I also made a loaf of Pumpkin Bread and now I have to go back to the grocery store this week so I can make my Grandma’s Pumpkin Chiffon Pie to celebrate my birthday.

Wednesday: Vegetarian Harira served with warm pita bread.

Thursday: leftovers or takeout

Friday: Vegan Fried Rice
