Meal Plan 05/03/21 - 05/07/21

I know I’m not alone in this but I’ve hit the wall again. We continue to be healthy, employed, together, privileged, etc. but I’m struggling. Again. There were a lot of tears last week. I’m trying to show myself a bit of grace and let myself hit the wall as many times as I need to until the whole pandemic shenanigans are less pandemic-y. I can do hard things. Maybe if I say that enough times I will begin to believe it.

I can do hard things and I can plan some meals and day by day we’ll get through this thing.

Monday: Barbecued cheeseburgers served with air fryer potato wedges and a fruit plate.

Tuesday: Grilled flank steak with Chimichurri Sauce served with some sort of responsibility vegetable.

Wednesday: Just-Keeps-Getting-Better Lentil Salad

Thursday: Leftovers! Takeout pizza! Sushi! Cereal! Dunno! Don’t care!

Friday: Drunken Noodles with tofu if I can find it (is anyone else experiencing a tofu shortage? It’s been so difficult to find in my area for months.) I’ll use chicken if I can’t find tofu.
