Meal Plan 05/17/21 - 05/21/21

We’ve got some classic BC spring weather this week - a mix of rain and sun and heat and humidity and cold. It’s challenging to meal plan because the weather shifts so abruptly and all of a sudden you’ve got blistering sun on the day you planned meatloaf and mashed potatoes. It’s not a serious problem in the grand scheme of things but I’m not motivated to spend a lot of time thinking about a detailed meal plan when the weather is like this.

Monday: Grossy Pelosi’s Sausage and Peppers served with a side of blistered shishotos and Samin Nosrat’s Ligurian Focaccia.

Tuesday: I have a kale salad kit in the fridge that needs to be used up and I bought tuna steaks at the butcher today so I’ll probably do some sort of seared tuna salad with avocado and strawberries.

Wednesday: Build-your-own snack plate dinner. Chopped fruit and veg, fancy cheese, salami, olives, pickles, crackers, nuts, pretzels, dried fruit, etc.

Thursday: Barbecued chicken served with arugula salad.

Friday: Smash Burgers served with some form of responsibility vegetable. Have I talked about my giant spatula yet? I bought it last year specifically to make smash burgers, which goes against my policy of not owning one-use kitchen utensils, and it’s brought me so much joy. We make diner-quality burgers at home and it makes me miss restaurants a little bit less. Highly recommend. A+. Would smash again.
