Last week's meal plan was moderately successful. We managed to eat homecooked meals every night. Most dinners were relatively nutritious (ignoring the cheese-feat that was Friday night pizza night).
I'm trying to keep it going this week. Cooking makes me feel almost like myself again. My house is a mess. My leg hair can be measured in inches. But we'll eat homecooked meals as often as I can manage because it makes me feel like I'm on the way to normal.
Monday: turkey taco salad
Tuesday: one pan lemon chicken breast, bacon, zucchini, onion, and bell peppers (aka: these are the only dinner ingredients in the house until I go grocery shopping.)
Wednesday: coconut quinoa chicken bowls
Thursday: whatever looks good at the fishmonger, served with grilled zucchini and green salad.
Friday: Canada Day! We'll probably barbecue something like the good Canadians we strive to be.
