It's decorative gourd season (this will never not be funny to me). This week's meal plan is all about comfort, warmth, and celebrating autumn (I know, so basic, Hills). I came home with not one, but TWO giant squashes yesterday so I've got my work cut out for me this week.
Monday: Tomato Orange Soup served with grilled cheese sandwiches and green salad. This soup was recommended in the Facebook food group I'm part of and I can't stop thinking about it. I'm doubling it but sticking with the 1/2 cup of butter because I can't justify making a pot of soup with a whole cup (and I'm team butter! I just can't do it.)
Tuesday: Roasted acorn squash stuffed with taco-spiced ground turkey and topped with cheddar cheese, sour cream, green onions, salsa, and guacamole.
Wednesday: Taco salads with leftover turkey from Tuesday's meal. Served with roasted sweet potato wedges.
Thursday: Beef Chow Fun served over broccoli and roasted butternut squash instead of noodles.
Friday: We've all got hair appointments Friday evening so we'll do something easy like pancakes and bacon or we'll grab takeout cheeseburgers.
