Meal Plan 01/09/23 - 01/13/23

One of my favourite coffeeshops has this amazing dish called the Temple Bowl and every time I order it I think to myself “I can make this at home, but better.” I’m not being a jerk, I just mean I can swap out the components that aren’t my favourite (plain white rice) for stuff that makes me feel jazzed (roasted sweet potatoes). I hadn’t done it yet because no one else in my house will eat tofu, but today my enneagram two personality swung into “unhealthy two” territory and I decided that I would direct all of the care and attention I usually put into my family’s meals into my own meals because none of the dingdongs I live with are losing any sleep over whether or not I get enjoyment or inspiration out of the meals I eat.

I love those dingdongs a lot. And it’s actually not their responsibility to worry about my meals because I am a grownup who can take responsibility for her own happiness. Which is what I did today! I made my own at-home Temple Bowl with stuff I love to eat (heaps of arugula! Roasted sweet potatoes! Cabbage braised in orange juice with lots of fresh ginger and garlic!) and it was glorious. And I have a lot of leftovers which no one is going to poach from the fridge so it was a win in my books.

Monday: Leftover Tofu / Arugula / Roasted Sweet Potato / Braised Cabbage thing

Tuesday: Chicken Fajitas

Wednesday: Buttermilk pancakes, oven bacon, cheesy scrambled eggs, fruit plate

Thursday: Greek Chicken Wraps

Friday: Leftovers / snack dinner / FFY (fend fer yerself) / takeout - it is a mystery only time will solve.
