Green Machine

This juice is a beast. A nutritional beast. Kale provides calcium and so many vitamins and minerals to fight inflammation and help you detox. Celery helps lower blood pressure and actually helps some people beat insomnia. Parsley is full of cancer-fighting antioxidants. Limes are full of vitamin C so no scurvy! Yay! (They also help to prevent some cancers and can actually cause cancer cell death as well.) Mint aids in digestion. Apples are chock-full of vitamins and nutrients, and add a sweetness that makes the juice more enjoyable. This juice isn't messing around. 


Juicing is all about trial and error to find your individual taste and preference. I love this balance of healthy greens but Shawn finds this blend too "naturey." According to Shawn, this juice tastes like "dirt and apples." I find it fresh and zippy. There is a definite grassy taste from all the greens but that can be toned down by eliminating the parsley and substituting baby spinach for the kale. Like I said, trial and error to find what you like. Unless your wife runs the juicer, in which case you'll drink what you're given and you'll appreciate it, Shawn

Wash your fruit and veg well before chopping. I always throw out the lime skin (too bitter) but I try to save as much of the pith as possible (the white layer between the skin and the fruit - it has important elements that help your body absorb nutrients or something sciencey like that.) I core the apples but leave the skin on. I remove the woody stalk from the kale. Different juicers treat fruit and veg differently so you'll have to experiment to see what works best for you and your machine. 


3 large stalks kale (I used dinosaur kale because that's what my market had this week but curly kale or red kale also work)
2 stalks celery
2 Granny Smith apples
2 limes
1 small bunch fresh mint
1 small bunch parsley 


Run ingredients through juicer. Serve over lots of ice. Makes two large juices (or two large-ish and one toddler-sized juice.)
