Garlicky Asparagus Pasta

This is one of those "don't have anything in the fridge, don't have any time, don't have the energy to come up with a meal plan" types of dinners. It's easy. It's fast. It's damn tasty. 


250g pasta  

4 eggs

1/2 lb asparagus (or thereabouts - it doesn't need to be exact) chopped into 1-inch lengths

2 - 4 Tbsp butter

4 cloves garlic, minced (use less if you don't want an intense garlic flavour) 

salt and pepper to taste

cheese (optional) 



Cook pasta according to package. Reserve a few Tablespoons of pasta water to add to your asparagus.

While pasta is cooking, melt butter in frying pan. Add garlic and asparagus and cook, stirring often, until asparagus is tender-crisp (depends on the thickness of your asparagus but should take 4 - 7 minutes.) Season with salt and pepper. Add a few tablespoons of pasta water until you have a little butter sauce happening.

While asparagus is cooking, poach eggs.  


Serve asparagus / butter sauce over pasta and top with eggs. Sprinkle with cheese if you're feeling sassy.
