I went back to my office job a month last month and my meal planning here on the blog is reflective of how much meal planning I've been doing in real life (spoiler alert: it's been non-existent.) I've got to get back in the habit of meal planning because our vegetable intake has steadily decreased as our pizza intake has increased.
This week is a little easier because today is a stat holiday. I just have two days in the office this week, which makes dinner time a lot easier. I get home around 6:00 on days I work in the office, so I don't have the time or inclination to spend a lot of time making dinner.
Monday: One-pan Mexican Quinoa Wraps for Meatless Monday (and leftovers for work lunches tomorrow).
Tuesday: Cajun chicken wings and roasted broccoli for Shawn, roasted broccoli with cheesy scrambled eggs for me. Peanut butter on whole wheat, no crusts, for Grady (#pb4life).
Wednesday: It seems bizarre to make spaghetti in the dead of summer but it's the only meal we all enjoy so spaghetti bolognese it is (with leftovers for work lunches tomorrow).
Thursday: BLT sandwiches with fresh fruit and veggies on the side.
Friday: Charcuterie Friday (can't stop, won't stop).
