Last week was ridiculously busy but my meal planning and prep paid off. We ate relatively nutritious, home-cooked meals every night. It felt like a major win and ordering pizza last night felt sweeter than usual (I'm all for healthy eating but you'll pry delivery pizza from my cold, dead hands).
This week is less busy but being prepared last week felt so good (and honestly felt like one of my only victories) that I want to continue the trend.
Monday: Thai Green Curry with Chicken (I was recently given this cookbook and I'm excited to try my favourite dishes.) I'll serve over quinoa with steamed broccoli on the side.
Tuesday: One-pan Farro with Tomatoes (I'll add feta cheese at the end, and olives on top of mine.)
Wednesday: Shredded chicken enchiladas with fresh guacamole.
Friday: Grilled flank steak over giant green salads.
