This week is going to be crazy busy, you guys. I know I say that all the time but this time I really mean it. Shawn and I both have a bunch of stuff going on and our days are going to be packed. I spent today stocking the kitchen to try to avoid a week of cereal and delivery pizza for dinner. Not that there's anything wrong with either, I'm just trying to fuel my body with the stuff that makes me unstoppable, rather than the stuff that makes me feel stabby and tired.
Monday: Rainbow Quinoa Salad (which leaves me with leftovers for work lunches) for Meatless Monday, served with chicken wings for the carnivore crowd (Shawn).
Tuesday: Pulled pork in bbq sauce, served with purple cabbage coleslaw and roasted broccoli.
Wednesday: I made a batch of crockpot shredded chicken and enchilada sauce and froze them today. I'll defrost them Tuesday night and whip up a pan of enchiladas with fresh guacamole when I get home from a work thing. My parents are taking care of the kids all day so I want to have an easy dinner to share with them.
Thursday: BLTs served with broccoli slaw and Okanagan peaches.
Friday: Michigans to use up the ragu I made last week when I foolishly thought Grady would eat spaghetti and then had to freeze when he decided it's a food he no longer accepts. (Kids, man. These babies of mine have been sent here to teach me something. Patience, probably.)
