Meal Plan 04/03/2017 - 04/07/2017

Grady is starting baseball this week which means we're going to be on the ball field at our regular dinner hour two time this week. I suddenly have a lot more sympathy for my mom who had four kids to coordinate.

Monday: Cilantro Lime Chickpea Salad for Meatless Monday (and a side of Cajun chicken wings for Shawn). YVR locals: Meridian Meats is donating $1 from every pound of chicken wings sold in April to the Canucks Autism Network. Time to stock the freezer!

Tuesday: Grady is currently obsessed with the Teenage Mutant Ninja Turtles. Last week he was telling me about an episode where they eat pizza soup (or something? I don't know. I have to admit, I tune out RIGHT QUICK when it comes to stories about cartoons and Minecraft.). Anyway, I'm thinking Grady and I can create a pizza soup. I'll pack it full of veg and Grady can top it with lots of melty cheese; maybe he'll actually eat something other than a peanut butter sandwich for dinner.

Wednesday: Cold Rice Noodles with Peanut-Lime Chicken.

Thursday: Leftovers

Friday: Homemade pizza but I'm trying a new dough recipe.
