I'm trying to cut down on meal prep and adopt a more minimalist approach to cooking. I love to cook and bake but I hate having hundreds of different ingredients cluttering up my cupboards and fridge. My goal this week is to clean out my freezer and cook as much from what I've already got in the pantry as possible.
Monday: Tarka Dhal over quinoa for Meatless Monday. Served with apple slices.
Tuesday: Bacon cheeseburger sliders served with chopped veggies and homemade ranch dip.
Wednesday: Cobb Salad made with spinach instead of mixed greens and goat cheese instead of blue.
Thursday: Appies for dinner (chicken wings, fresh veggies with hummus, fresh fruit with peanut butter dip, cheese and crackers).
Friday: Dinner with friends.
