Last week we experienced Baby's First Emergency Room Visit and then two days later, Baby's Second Emergency Room Visit. Mix in a few regular doctor's office visits on top and you have one chaotic week. Poppy's doing a lot better now but she's battling a nasty bug so life is a bit up in the air. I appreciated having a meal plan last week so I didn't have to do any thinking - my meals and ingredients were already sorted; I just had to prepare them and put the food in my facehole. There's not a lot of sleep right now so I've put together an easy meal plan packed full of protein and veg to keep us going.
Monday: Coconut Ginger Lentil Soup with crispy baked tofu for Meatless Monday.
Tuesday: Baked chicken breast stuffed with a mixture of feta cheese, artichoke hearts, pesto, and spinach (aka: clean out my fridge!) served with roasted broccoli and topped with vodka sauce.
Wednesday: Turkey Tacos
Thursday: Leftovers or BLT sandwiches with avocado
Friday: Grady doesn't have school so I'm going to let him find a recipe, grocery shop, and cook the meal (hold me).
