Our holiday is over and we're back home. Time to put away the fries and croissants and start eating like we give a damn. We actually didn't do too poorly with our eating habits while on our massive road trip but we didn't eat enough vegetables. This week we're trying to get back into our habits of eating protein and lots of veg, and having a little Valentine's Day fun (aka: chocolate).
Monday: Oven-roasted chicken shawarma with garlic sauce. Served with roasted purple cabbage.
Tuesday: Valentine's Day breakfast for dinner. Bacon, cheesy scrambled eggs, heart-shaped chocolate chip pancakes. Served with fresh fruit.
Wednesday: Tofu stir fry with purple cabbage, carrots, spinach, broccoli, and onions in peanut sauce. Served over quinoa with lots of green onions.
Thursday: Meatballs in a simple tomato sauce served with roasted broccoli.
Friday: Leftovers and/or homemade pizza.
