Meal Plan 5/16/2016 - 5/20/2016

Hiiiiii! Still pregnant! Slightly larger and infinitely more crazy than last week!

A few weeks ago, Jodi left a comment asking if I had any freezer meal suggestions for when baby arrives. I don't. I feel like a meal planning sham! Here's the truth: I am not a huge fan of reheated-from-frozen meals. I think it's a texture thing; everything just feels a bit mushy after it's been frozen. With that being said, over the last few weeks, whenever I marinate a flank steak or chicken wings, I make double and freeze half. That way I've got lots of frozen proteins that are easily barbecued. During the summer months we tend to eat a lot of giant green salads topped with a barbecued protein so the timing works out perfectly for us. If I were having a winter baby, I'd make an effort to freeze a few lasagnes and some hearty soups.

But! Seeing as Lady Baby is taking her sweet time to arrive, I still have to worry about this week's meals. The weather has cooled down considerably (thank goodness) so I'm hoping that translates into me having more of an appetite. Last week I survived on watermelon and lemonade and really struggled to eat protein (which is what I need right now).

Monday: Eggs Benedict served with fresh fruit.

Tuesday: kale (bagged!) salad supplemented with grape tomatoes, strawberries, and raspberries. Topped with simple baked salmon fillet.

Wednesday: barbecued chicken burgers with a side of kale salad (I bought the big bag).

Thursday: snacky dinner - hardboiled eggs, fresh fruit and veg, hummus, guacamole, taco chips, and chicken wings for Shawn. Finish the kale salad if there's any left.

Friday: Takeout something. Greek maybe? Or extra spicy Indian if Lady Baby is still MIA.
