Meal Plan 4/4/2016 - 4/8/2016

I didn't manage to plan our meals last week so grocery shopping was chaos and we ordered takeout more times than I'd like to admit. Time to hop back on the meal plan wagon is what I'm saying.

I'm all about quick and easy this week. Life feels a bit unmanageable right now and I don't have the time or energy to devote to elaborate meals.

Monday: BBQ steak salad. Sirloin steak was on special at the grocery store this morning so I bought a 3-pack. I've got them marinating in a fresh rosemary / garlic / shallot marinade in the fridge right now and the plan is to pull them out of the fridge and barbecue as needed. I bought a salad greens mix (I'm all about the convenience factor right now) which I've washed and stored in the fridge. I'll add avocado, tomato, cucumber, and feta cheese before serving. I figure with my Sunday prep this meal will end up taking no more than 10-15 minutes to assemble after work before I chew my arm off in hunger.

Tuesday: Same as Monday!

Wednesday: I'm at home on Wednesday so it's another prep day. I'll do Hot Shot Shrimp for Shawn, served over quinoa, and some sort of vegetable/chickpea/coconut milk curry for me, also served over quinoa. I'm also going to try these Crispy Cheddar Cauli-Tots for Grady (and I imagine Shawn and I will end up eating them).

Thursday: I'm back in the office so we'll be eating Wednesday night's leftovers. Maybe I'll throw together a quick salad. Maybe I won't. I'm a riddle wrapped in a mystery inside an enigma.

Friday: Breakfast for dinner. Roasted sweet potatoes, cheesy scrambled eggs, buttermilk pancakes, and fresh fruit.
