Monday: Bolognese on spaghetti noodles. Pecorino petals. Green salad.
Tuesday: I made this crockpot chicken noodle soup and followed the recipe almost exactly (I just subbed chicken breast for the chicken thighs) and it failed miserably. The egg noodles formed a paste in the crockpot and it's inedible as soup. Even Shawn couldn't eat it and he's generally the least picky eater in our house. I refuse to throw it out, though, because I've got 30 minutes of prep, 8 cooking hours, and about $15 invested in it. So! I scooped out the chicken and veg and my plan is to make a cheese sauce, steam some broccoli and cauliflower, mix it all together in a casserole dish, top with bread crumbs, and bake until bubbly. I'm hoping the starchy noodle paste will just thicken the sauce and not make the whole thing too gummy to eat. It's either going to taste great or be a total failure (in which case, takeout pizza!)
Wednesday: Leftover chicken experiment or leftover takeout pizza.
Thursday: Black bean sweet potato soup served with shredded cheddar cheese and sour cream. Green juice.
Friday: Bolognese served over roasted acorn squash. Percorino petals. Garlic bread. Green juice.
