Rosemary Feta Turkey Meatloaf

This meatloaf is flavourful and easy to throw together. It's not a great weeknight meal because it needs an hour in the oven but the leftovers heat up nicely so it's a great Sunday prep meal. Whip it up Sunday and reheat Monday for a quick after-work dinner.

Ingredients

1 egg, lightly beaten
1/2 onion, finely diced (approximately 1/2 cup)
3 cloves garlic, minced
1 Tablespoon mustard
1 Tablespoon Worcestershire sauce
1 teaspoon Tabasco sauce
1 teaspoon salt
1/2 teaspoon black pepper
fresh rosemary, finely chopped (approximately 1 Tablespoon)
1/2 cup feta cheese, crumbled
1/2 cup fine bread crumbs
1lb lean ground turkey

Directions

Preheat oven to 350F.

Mix all ingredients until combined well.

Lightly pat into 9x5x3 loaf pan. Cover with aluminum foil.

Bake in preheated oven for 30 minutes. Remove foil. Return to oven, uncovered, for additional 30 minutes.

Serves 4.
