This week was busy and a quick look at the calendar tells me it's not going to slow down until January. Our meal plan wobbled and then failed spectacularly after Poppy came down with a high fever and our (already laughably bad) sleep diminished. Sticking to easy proteins and lots of greens this week in an attempt to feel good and boost my pitifully sapped energy reserve.
Monday: Chicken Barley Soup served with egg salad sandwiches.
Tuesday: Baked salmon fillets topped with mango salsa and served with steamed broccoli.
Wednesday: Baked sweet potatoes topped with the works (bacon, sour cream, fried onions) and leftover chicken barley soup served with green salad.
Thursday: We're headed to Enchant and I'm so excited to check out the food trucks. No cooking tonight!
Friday: Peanut butter sandwiches and apple slices for Grady. Real adult food at a real adult pub for Shawn and me.
