Last week's meal plan was a winner. I spent very little time in the kitchen and we ate vegetables every day. I'm calling it a success.
Monday & Tuesday: I'm going to be out so Shawn will do barbecued chicken on spinach salad. Easy. Healthy. Limited prep time (Shawn is a lot of things but comfortable in the kitchen he is not).
Wednesday: Chicken Coconut Milk Soup served with quinoa and steamed broccoli.
Thursday: Repeat of Wednesday. (I have a lot going on this week and don't want to spend a bunch of time in the kitchen.)
Friday: Homemade pizza. Grady will have pepperoni and cheese. Shawn will have shredded chicken on barbecue sauce with peppers, pineapple, and onions. I'll have some form of veggie pizza with extra olives.
