Meal Plan 11/16/2015 - 11/20/2015

I didn't make a meal plan last week because we were emptying the fridge before heading off to Vegas. Vegetables and lean protein are featured heavily this week as both Shawn and I try to get over our fried-food hangovers.

Monday: The Soup Solution's Coconut Curried Vegetable Soup and green salad with chickpeas thrown in for protein.

Tuesday: Quick and Flavourful Oven-Baked Chicken Thighs with green salad.

Wednesday: Versatile Veggie Curry with Cilantro Yogurt served over quinoa.

Thursday: Binner. Whole Wheat Buttermilk Pancakes, scrambled eggs, roasted sweet potatoes, roasted cherry tomatoes, bacon.

Friday: Leftovers.
