Last week's meal plan was so successful that I'm trying to stick with it (even though I'm still lacking in the motivation department).
Monday: fish tacos. I don't really follow a recipe. I just buy whatever white fish is on sale, cut it into thumb-sized pieces, dip it in lightly beaten eggs and then panko breadcrumbs, and then bake on a parchment paper-lined cookie sheet at 400F for 10 - 15 minutes depending on the thickness / density of the fish. I serve in soft flour tortillas with avocado, shredded lettuce, and hot sauce. I do not love fish tacos but they're one of Shawn's favourite foods so I try to add them to the menu every once in a while. I'm totally down with the taste, I just hate all the chopping and prep that goes into a one-time meal (leftover fish tacos are vile).
Tuesday: butter chicken. Last week at the butcher I noticed SpiceWorks butter chicken mix and decided to give it a try. I'll serve it with basmati rice, roasted sweet potatoes, and broccoli.
Thursday and Friday: leftovers (or breakfast-for-dinner if we run short).
