Meal Plan 10/26/15 - 10/30/15

I accidentally ordered a lot of pizza Saturday night. I had the munchies and Shawn was out and Grady was asleep and my fridge was bare. So I ordered takeout and it was delicious but it's not exactly sustainable as far as feeding a family healthy food on a budget is concerned.

I've been pretty uninspired in the kitchen lately. Nothing sounds appealing to me. I'm totally unmotivated to cook. I'm in a bit of a funk. I asked Twitter for favourite quick and easy recipes and I was rewarded with weeks' worth of new recipes to try. I'm almost excited to get back into the kitchen.

So! If you're in a similar place and you're looking for inspiration, this is what's on my menu this week:


Meatless Monday: Ashley suggested these slow cooker lentil tacos. I subbed quinoa for the brown rice and veggie stock for the water. I eliminated the salt (because the stock was salty enough) and paprika (because I'm all out). I added a few carrots, finely diced. This recipe was extremely easy to throw together and I'm hoping it freezes well because it makes a lot.

Tuesday: Danielle suggested this lemon chicken which made me make actual slurping sounds when I read the recipe. I'm going to pair it with Miriel's suggestion of zucchini parmesan.

Wednesday: Sarah sent me this slow cooker black bean soup recipe which I am very excited to try because: 1- I don't have a good black bean soup recipe, 2- slow! cooker!, 3- I am going to top it with all the avocado and sour cream.

Thursday and Friday: leftovers (and if we run out of leftovers, takeout pizza! I will not be shamed by this.)
