Light Green

I was so intimidated by green juice. Before I started juicing, I thought of it as an all-or-nothing kind of thing. Either you're drinking straight wheatgrass shots or you're guzzling artificial colour-filled sugar water. It doesn't have to be so scary, though. This juice is light and refreshing and (most importantly if you've got a timid beginner) it doesn't taste like nature (as Shawn so eloquently puts it when I've gone a bit heavy on the greens.)

Ingredients

Approximately 2 cups of spinach or other greens (I find baby spinach to be very mild so I use it when I'm trying to bring rookie juicers over to the dark side)
1 large grapefruit
1 large lemon
2 apples
1 small bunch parsley
1 small bunch mint

Method

Discard citrus peel (too bitter) and core apples. Run ingredients through juicer and serve over lots of ice. Makes two large juices (or 2 large-ish and 1 toddler-sized juice.)
