Rehydration Green Juice

This juice is light and refreshing and is the perfect solution if you're parched. The citrus cuts the earthiness of the kale and keeps the pineapple from being overpoweringly sweet. Cucumber juice has a mild flavour so it almost thins out the richness of the green juice and helps you drink more (which is great because more green juice = more nutrients).

Ingredients

5 - 6 kale leaves
1 orange, zest removed, as much pith remaining as possible
1 lemon, zest removed, as much pith remaining as possible
1/2 small pineapple, skin removed
-inch piece cucumber
1/2 Granny Smith apple

Citrus Green Juice

This juice is not for the faint of heart. The leafy greens are intense and the citrus is unapologetically sour with no apples or carrots to temper the tartness. Shawn described this juice as "liquid earth." I love it. It punches you in the face and makes your tongue curl. The grapefruit adds a bitter element and I realize I'm not really selling this juice but trust me, it just works.

Ingredients

3 - 4 leaves kale
big handfuls baby spinach
1 grapefruit, skin removed
1 large orange, skin removed
2 limes, skin removed
1 lemon, skin removed

Tropical Green Juice

This juice has personality. It's light and zippy and the sweetness from the pineapple is nicely balanced by the tart apple and lime.

Ingredients

1 handful parsley
1 handful mint
3 - 4 kale leaves
1 lime, zest removed but leave as much pith (the white stuff in between the skin and the fruit) as possible
1/2 pineapple, peeled
1 green apple, cored

Directions

Feed fruits and vegetables through your juicer. I have an Omega J8006 which is a masticating juicer so I do my herbs first, followed by leafy greens and citrus, and I leave my hardest fruits and veg for the end to sort of "clean" as much out of the machine as possible.

Serve over ice. Makes two juices (quantity varies because of natural products).

G8 Green Juice

This juice has a lot of vibrant flavours but is surprisingly mellow for green juice. It hits all the nutritional high points and has much less sodium than store-bought V8.

Ingredients

1 small bunch mint
1 small bunch parsley
3 - 4 kale leaves
1 grapefruit, zest removed but leave as much of the pith as possible
1 orange, zest removed, leave the pith, yada yada yada
1 lime, zest gone, pith stays, you get it
1 pear, cored
1 piece cucumber, about 4 inches in length

Depending on what kind of juicer you have, you can keep your fresh juice in an airtight container in the fridge for some time (I try to consume within 12 hours but I've been known to keep juice for up to 24 hours) before it starts to lose a significant amount of its nutrients.
